Hunters, foragers, our facility, traceability — our work is held together by the conviction of every person who shapes it.
猟師は、私たちにとって取引相手ではありません。山を読む師であり、品質の最終決定者であり、長野の生態を維持する最後の人たちです。獲るタイミング、撃つ場所、止めの早さ、血抜きの精度──すべてが食材の差として現れます。
For us, hunters are not vendors. They are masters of the mountain, the final arbiters of quality, and the last keepers of Nagano's wild balance. Timing of the take, location of the shot, swiftness of the kill, precision of the bleed — each of these decisions defines the ingredient.
松茸も、花山椒も、山菜も、それを最良の状態で見つけられる人がいて初めて、食材になります。長野には、何代にもわたって特定の山域を歩き続けてきた採取者たちがいます。彼らの足が知っている場所を、私たちは決して開示しません。
Matsutake. Hana-sansho. Wild greens. None of these become ingredients without someone who knows where to find them at their absolute best. In Nagano, there are foragers who have walked the same mountains for several generations. The places their feet know, we will never disclose.
止め刺し・血抜きからこだわるため、私たちは自ら山へ入り、止め刺しを行います。最初の一手から自分たちで握ることが、血の臭みを残さず、繊維を傷めない条件です。
We go into the mountain ourselves to make the dispatch — because the kill and the bleed decide everything that follows. Taking that first step in our own hands is what lets us leave no metallic notes and preserve the integrity of the muscle.
松茸は基本的に、採取から12時間以内に出荷をします（朝どれをその日のうちに発送）。さらに、個体・採取場所・採取者・捕獲者・処理者・発送日時のすべてを記録し、お客様のご要望に応じて開示できる体制を整えています。
Matsutake is shipped, as a rule, within 12 hours of harvest — morning harvests leave us the same day. Every item is logged by individual, location, forager, hunter, processor, and dispatch time — and the record is available to our partners on request.
